Muffin Making Monday.

Eli loves baking so I try and make it a regular occurrence and get him to help out as much as possible, he loves stirring the mix, measuring out the ingredients and of course licking the bowl! Since stumbling across the most perfect muffin recipe we have been making a weekly batch trying out all sorts of flavours.

Today Eli had other plans and decided to fall asleep so I made this batch without the help of little fingers. Todays flavour are cinnamon and raisin, but other family favourites include mixed berry, triple chocolate and blueberry and lemon. I like being about to give Eli a treat knowing exactly what is going into it and for Greig to have something yummy and homemade in his lunchbox.

These are the base ingredients you will need; this recipe is so good I instantly wrote it down in my Frankie Magazine journal so i can constantly refer to it:






Its really as simple as combining all the dry ingredients in one bowl and mixing at the wet ingredients apart from the milk together in another then combining the two without over mixing. You add the milk a little at a time at the end just to sufficiently loosen the mixture so that it is not too thick.




Fill silicone muffin trays with the mixture I find this generally makes 8 -10 muffins depending on size. Put the muffins on the middle shelf of an oven preheated to 180 degrees these should only take around 20 minutes until a skewer comes out clean and they are a little brown on top.




And here they are, the most delicious and moist muffin and the whole family love them. There are so many flavour combinations to try as well....why not coconut and cherry, chocolate chip or apple and cinnamon.
