So for lunch today I made a garlic mushroom, ham and spinach pasta....no different variations to make it baby friendly just a one pot meal that everyone can share.
So what you will need:
Pasta of any style. (I used penne)
Sliced ham.
Mushrooms.
Handful of spinach.
Garlic.
Garlic and herb cream cheese.
Wholegrain mustard.
A low salt stock cube or just some boiled water.
Grated cheese for on top. (optional)
Cook your pasta according to the packet instructions, whilst it is cooking slice some mushrooms and garlic and add to a fry pan with a little olive oil and pepper. Once the mushrooms are soft add some chicken stock or just boiled water and into it stir a teaspoon of wholegrain mustard. Then stir into you mixture 1.5 tablespoons of cream cheese I like to use garlic and herb cream cheese for extra flavour, this will create a lovely creamy sauce. If they sauce seems too loose just simmer for a few minutes until its reduced then add your diced ham and a handful of spinach leaves.
Drain your pasta and add it too the sauce stir until all the pasta is nicely coated. You can also add a load of grated cheese at this stage but we are trying to be a littler healthier so we had ours without.
