Smoked Mackerel Spaghetti With Asparagus & Sugar Snap Peas - A Recipe.

























This is an amazingly tasty budget meal that will only cost you a matter of a couple of pounds yet will feed a whole family, and trust me it will be a winner! Not only is smoked mackerel one of the cheapest fish you can buy it is also really good for you containing great levels of omega 3 and paired with some green vegetables it is a lot healthy and nutritious then your average pasta dish. Here is what you will need:

  • 250g (half a pack) of spaghetti.
  • 1 pack of smoked mackerel.
  • A handful of mushrooms.
  • A handful of asparagus.
  • A handful of sugar snap peas.
  • 1/4 of a red onion.
  • 2 cloves of garlic.
  • 1tsp of wholegrain mustard.
  • 1/2 a tub of reduced fat creme fraiche.
  • Juice of a whole lemon.
  • A large bunch of fresh parsley.
  • Parmesan to serve (optional).


First of all start cooking your spaghetti to the packet instructions and then prep your vegetables, I roughly chopped the onion and mushroom, diced the garlic and cut the asparagus into thirds. Put your onion, garlic and mushrooms in a frying pan with a little olive oil and cook until softened, after add your asparagus, sugar snap peas and a 100ml of boiled water. Cook for a further 10 minutes to allow the green vegetables to start to soften.




Add your teaspoon of wholegrain mustard, a generous amount of freshly ground black pepper and then 1/2 a tub of reduced fat creme fraiche. Squeeze into your sauce the juice of a whole lemon and then flake in your pre cooked smoked mackerel. As it is ready to eat and only needs to be warmed through I would do this right at the last minute as well as adding a large punch of diced fresh parsley.


Drain your spaghetti adding it straight into your sauce and mix around until all the pasta is covered in sauce and then dish up! This feeds 2 adults and 2 children and for a extra tasty touch add a sprinkle of grated parmesan on top of each portion.



I cant begin to tell you how cheap yet tasty this meal is I mean a pack of spaghetti cost me 29p and the mackerel only £1.49! Both the boys enjoyed and is a great way of introducing oily fish into their diet.
