Puffy pastry is not just for pies, it can be used to make very quick and easy tarts with unlimited flavour combinations. Don't worry if your not the greatest cook as puff pastry comes pre-made and pre-rolled and unfolds into a large square all ready to add your toppings to right away. Throw on your favourite combination of toppings leaving an inch around the edges for the pastry to puff up and go crispy. Place in a hot oven at 200 degrees for 10-15 minutes or until browned and nice and crisp. These are the tart flavours pictured above:
- Pesto, sun dried tomato, asparagus and parmesan cheese.
- Caramelised balsamic red onions, courgette and fetta cheese.
I made these for dinner and served them with salad and coleslaw, a perfect meal for this hot weather when you want something a little lighter.
