Cauliflower and Broccoli Cheese - A Family Favourite Recipe.


Cauliflower cheese is the ultimate comfort food, its super cheap to make not to mention a great way of getting kids to eat their vegetables. I usually like to serve it with smoked fish or gammon and both my children love it! This is what you will need:

50g butter.
50g flour.
200ml milk.
1tsp mustard.
A large handful of grated mature cheddar cheese.
1 small head of cauliflower.
1 small head of broccoli.

Steam your broccoli and cauliflower florets and place in an oven proof dish to on side. Preheat your oven to 200 degrees and then in a saucepan melt your 50g of butter. Once melted add your 50g of flour and whisk into whats called a rue gradually add your milk a little at a time continuously whisking so to avoid any lumps. Add a teaspoon of mustard and a large handful of grated mature cheddar cheese whisking until it has all melted, continue heating until the sauce has thickened at this point you can add salt and pepper to taste although I tend to avoid salt if the children are having it also.

Now that your sauce is ready pour over your steamed vegetables and add a sprinkle of extra grated cheese over the top. Place in the middle of an oven for 20-30 minutes until hot all the way though and the cheese is golden and bubbling.

I served my cauliflower and broccoli cheese with honey and mustard roasted parsnips and grilled smoked mackerel and everyone had completely clean plates so it must have been good.
